These are my absolute favorite brownies simply because you don't go into chocolate overload when you eat them. Not gonna talk about fat and calories (OOPSY) but these are soooooo good. AND, because they are not overwhelmingly chocolaty, they are GREAT to do add-ins (I will give a few suggestions on that, too). No clue where the recipe came from originally, but my brother got it from a girl he dated in his teens.
2 cups sugar
1/2 cup cocoa
1/2 tsp. salt
4 eggs
1 TBSP vanilla
1 cup butter
1 cup flour
Mix sugar, salt and cocoa well with a wire whisk. Add butter, eggs and vanilla. Mix with electric mixer until well blended. Add flour and mix well again. Pour into ungreased baking pan. Bake at 350 degrees for 30 to 35 minutes. Do NOT overcook. The toothpick test does not work with brownies.
Now for some awesome add-ins.
Marshmallows and walnuts for rocky road
chopped up bits of caramel, coconut, and pecans for German chocolate
chocolate chips for those times you need to OD on chocolate
chopped maraschino cherries and chocolate chips for black forest
peanut butter chips
white chocolate chips and macadamia nuts
nuts of any kind
the list is endless.
