The best way to cook a whole duck.... Easter Sunday Meal

I'll be slaugtering my first two ducks for easter dinner. I have a few realitives that are a bit sqwimish when it comes to eating duck..... And I want to make sure that when they try it they won't have a reason to not like it........

Anyone have a good recipe to use? The birds will be ready wednesday... so time is not an issue...........
 
In order to cut down on the greasiness of the meat, stuff your birds with ordinary white bread and then cook it half way. Remove the birds from the oven and replace the yucky oily bread with whatever stuffing you prefer to use. I used a cranberry cornbread stuffing (from a box) and orange sauce for the outside of the bird at Christmas--it turned out delicious!

I'm haven't cooked much duck (love it, though) but I do remember my mom piercing the skin and putting it on a rack so that the fat could drip out and the duck wouldn't be submerged in it.

The suggestion the previous poster offered about changing the stuffing sounds like a very good idea, also.
