Tri Tip Recipes -- How do you do it?

Hi all, I managed to get a bag of tri-tip for a very good price the other day. Now I've got to start using it. How do you recommend? Low and slow in the oven? Quick cook on the grill? Crock pot or instant pot? I've got enough of this stuff to try a few different ways. I can do a google search, but that doesn't necessarily bring up tried and true recipes posted by real people.

So what would you do?
 
I'm an Instant Pot junkie and this is the recipe I used off of Pinterest and we really liked it!
Instant Pot Tri-Tip

Ingredients

  • Rub Ingredients:
  • 1 tsp smoked paprika
  • 1 tbsp salt
  • 1 tsp mustard powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp black pepper
  • Other Ingredients:
  • 1 onion
  • 2 cloves garlic
  • brisket roast
  • 2 tbsp liquid smoke
  • 2 c broth or water
  • 1/4 cup coconut aminos (sub soy sauce)
  • 3 tbs apple cider vinegar or lemon
  • 1/4 c white wine (optional)
  • 2 tbsp butter for the sauce
Instructions


Step 1: Mix the spices together and rub it all over the meat. You can let the roast sit overnight if you have the time, or you can start cooking immediately.
Step 2: Place all other ingredients except the butter into the Instant Pot. Place your trivet inside and set your tri-tip on top of it. Cook under pressure for 50 mins. Allow pressure to naturally release. A natural pressure release ensures your meat will be juicy and tender.
Step 3: Once the pressure is released, remove the roast and put it on a baking sheet. Set it under a broiler for a few minutes and allow a brown crust to develop. Length of time will depend on the type of broiler you have and the position of the meat in the oven, so make sure to monitor closely. Remove and set aside to rest once done. At this point you may not even need to slice it. It might just fall apart. If it does not, make sure to cut in thin pieces across the gain for a more tender result.
Step 4: Use a blender or immersion blender to purée the onion and garlic into the broth. Then, pour the mixture into a sauce pan using a medium high flame and start to reduce the sauce. Allow the sauce to reduce by at least one half. Once the sauce is reduced, whisk in butter and set aside.
Once all the elements are complete, your dish is ready to serve.
