What do quail taste like?

I have been reading this section for a while now, and I am thinking I might want to try raising cotournix for meat. I have never had it though, and was wondering what it tastes like. Please don't say 'delicious' as that won't actually help me very much.

Does the meat have a very distinct flavor, or does it pretty much take on whatever you cook it in like chicken?

Can you make broth out of the carcasses like chicken?

The two types I have been thinking about are A&M's and Jumbos. If I get both and put an A&M male in with the Jumbo females, will my chicks hatch out big but with lighter meat? I don't really like dark meat chicken, so I thought I might like the A&M's better.
 
They are good, similar to chicken, but slightly different. If you've ever had spruce hen/grouse, they're close. The meat is dense, but tender, and you can cook them on the BBQ, or chunk the meat and do a stir-fry or fricassee. We like to saute them up with a little bacon and seasoned flour, and serve them over rice with cranberry/orange sauce.

It's hard to explain if you've never had a gamebird before. I think rabbit tastes like chicken, too, but different.

The quail I bought from the market I can swap directly with any chicken recipie that calls for legs/thighs, and the taste is very similar, but not exact. Check around the stores/health food joints/ethnic markets in your area, some may carry quail.
 
This is something hard to explain. I don't think they taste like chicken. they have a very bold & rich taste. It was said like grouse earlier & I would agree to some point. Maybe some where between grouse & dove.
 
The first time I had quail I remember thinking "it tastes like chicken, but with more of a steak flavor".

So that's my answer to you. LOL It tastes 90% chicken/ 10% steak. Imagine a tender juicy chicken, but with a tad more texture and flavor of steak.

But everyone has different tastes, that's just what I remember thinking.
