Would this be safe??

I know a farmer that has a lot of corn growing ( the kind for people and also Indian corn) when I was down at the farm helping yesterday I noticed at the top of each corn plant there is shoots that grow out the top that looks like grain on them. Would this be safe to feed chickens? Also he said I could have all the corn that isn’t picked ( to small) before they turn it under. How could I dry and process this for cracked corn or just dry it out without mold? Also is Indian corn ok for chickens ? I would think so. I hate to see all this corn go to waste. Any suggestions would be very appreciated.
 
Indian corn is, I believe, a hard storage corn, bred for looks anymore. I don't think is very nutritious. The tassels could be unformed kernels or pollen tassels.
