Oh my gosh!!

So, one of the reasons I fell in love with my wife was because of her apple crisp. Well, tonight I was seriously in the mood for some peach cobbler. I remember that I use to do the dutch oven thing (can of 7-Up, can of peaches, box of cake mix... done!) and thought there had to be a super simple single serving cobbler recipe out there.

Well, I did some Googling and all of them required baking. I was thinking about trying the microwave, but my recent experience with making the chocolate cake in a cup in the microwave left me with rubbery cake memories.

Fortunately for me I stumbled on this "Apple or Pear Crisp for One" gem of a recipe. I followed it perfectly except I used canned peaches.

WOW... it was just amazing! Super easy, fast, and soooo yummy!

Ingredients

* 1 serving of fruit sliced
* 2 tablespoons brown sugar
* 2 tablespoons quick-cooking oats (I used 5 minute "old fashioned)
* 1 tablespoon flour
* 1/8 teaspoon cinnamon
* 1 tablespoon butter

I put the fruit in one bowl. Then I put everything else in a mug and zapped it for 30 seconds in the microwave to soften the butter and mixed all these "other" ingredients together and then spread the mix on top of the fruit in the other bowl.

Microwaved it for 2 minutes and let it set for a while to cool (was crazy hot). Added a ton of whipped cream and YUMMMMM!!!

Sounds great but I wonder if the can of peaches worked great due to the softness of the canned peaches? I mean have you tried it with a fresh peeled hard apple or a firm fresh peach? Just wondering cuz Hubby is picky & would want a soft apple.

What is the instructions for the recipe you mentioned: (can of 7-Up, can of peaches, box of cake mix). Also sounds interresting.

I have 2 huge Bartlett pears staring at me accusingly from a bowl on the kitchen table.
Now I know what is happening to one of them.....

FWIW:
I've played with the 5-minute cake recipe too and it seems underbaking gets you closer to "real" cake.
Slathering on canned (or homemade) icing helps too.
 
Just tried this recipe with a fresh Golden Delicious apple. Very Good! The fresh apple took 4 minutes to cook and soften, but that could be my small, low power, older microwave oven.

Thanks for this quick and tasty dessert! Oh, and a scoop of vanilla ice cream puts it over the top!
