zucchini bread

Since we moved we have not been able to find our zucchini bread recipe. Does anyone have a good one we could use? We plan on making gift in a jars and breads for Christmas presents this year and we have a whole freezer full of zucchini to use.
 
I can't believe no one has posted a zucchini bread recipe. There are lots of good ones on the internet. I basically use my banana bread recipe and switch out the 2 cups zucchini for the banana and add cinnamon or other spices. If you check in the canning section there was a recipe for zucchini bread in a jar, or do a search here on BYC it should come up.
 
Ingredients

3 eggs
1 cup vegetable oil
2 cups white sugar
2 cups grated zucchini
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons ground cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1/2 cup chopped walnut

Directions

Preheat oven to 325 degrees F ( 165 degrees C). Grease and flour two 8x4 inch loaf pans.
In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. Divide batter into prepared pans.
Bake for 60 to 70 minutes, or until done.

2 teaspoons baking soda
1 teaspoon ground cinnamon
3 cups sugar
1 cup vegetable oil
4 eggs, beaten
1/3 cup water
2 cups grated zucchini
1 teaspoon lemon juice
1 cup chopped walnuts or pecans


Directions
Preheat oven to 350 degrees F. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients into dry, add nuts and fold in. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean. Alternately, bake in 5 mini loaf pans for about 45 minutes.

Wow!!! I had given up on a response and I just happened to check again. Thanks guys.
So far we have two pancake mixes put together and after a few more recipies we will be putting soups together also. Hopefully everyone likes the soups and breads we make for Christmas.
 
I don't know how I missed this thread either. I use this one:

Zucchini Bread

3 c. all purpose flour 1 c. veg. oil
1 tsp salt 2 1/4 c. white sugar
1 tsp baking soda 3 tsp vanilla extract
1 tsp baking powder 2 c. grated zucchini
3 tsp. ground cinnamon 1 c. chopped walnuts or pecans (optional)
3 eggs

1. Grease and flour two 8x4 pans or 6 min loaf pans. Preheat oven to 325 F.

2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.

3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until combined. Pour batter into prepared pans.

4. Bake for 40-60 minutes (30 min for mini loaves), or until toothpick inserted in center comes out clean. Cool in pan on rack for 15 minutes. Remove and enjoy!!!
 
Gottalovemychickens we tried your first recipie. Thank you it is soooo good!!! I can't keep my hands out of the pan
