At 2 weeks they start really trying to fly and the pooping really ramps up.

If you're hatching 40-60 chicks.. at what age do they start to become a handful?

1.5 to 2 weeks of age, the poop becomes a noseful.
2-4 weeks of age, they are popcorn and will jump out of the brooder and are a handful.

It all depends on your set up and management practices. Some people can house, feed and tend more than others. Keeping them fed, watered and clean is the limit.
