If you're looking for a tasty breakfast and you want a simple recipe, or if you don't know what to make with your wonderful eggs, then look no further than this recipe for perfect scrambled eggs every time!

WARNING: Eggs cook fast, but they also burn fast! Do not leave eggs on heated pan unattended!

You will need:

1-2 eggs
A pinch of salt
A pinch of pepper
1 Tbsp. olive oil OR 1 Tsp. butter
(Optional) A few fresh herbs (such as parsley or basil)
¼ cup milk

Now let's get cracking!

In a small-medium sized bowl, crack your eggs. I used chicken eggs for this recipe. If you get any shells in your bowl, remove them with your (clean) fingers or a small spoon.

If you are using herbs, add them in now or sprinkle them on later. Add the salt and pepper. (Make sure to just add a pinch of both- you don't want it to be too salty or too peppery!)

Now add your milk and beat everything together with a fork. Stop mixing when it turs pale and light, like this:

Now heat a pan on low-medium heat and add your olive oil/butter.

Wait about ten seconds for the oil to heat up (or for the butter to melt), then add your egg mixture.

Wait till it starts cooking around the sides of the pan, then stir and break apart constantly with a spatula.

Cook for a few minutes, until it no longer looks wet at all. Make sure to keep mixing constantly, otherwise it may burn.

Once ready, place onto a plate and serve immediately (Buttered toast goes well with the eggs).
