They all have saddle and hackle feathers. The difference is the appearance of them. Roosters typically are pointed and shiny; hens are rounded and more matt. Even hens will have pointed neck feathers (hackle) to some degree, but not usually as far down.

The pan with the rack just has the water over it so the wet mess will go into it and not on the bedding, but I do have a hooded chick waterer very similar to the tub I can use for water. i will have to see if I can find something to adapt as a food bowl though. Thank you so much for the ideas!!!
Happy surprise when I got home today. I went in to check on that last little one drying off and getting stronger and one of the 4 I had left in the incubator that I was sure were goners had hatched!!!! Ended up with 8 instead of 7!!!!
