    Pressure canning is done in a pressure canner, not a hot water bath! I think vinegar is a minimum requirement for canning beans or beets, it sure is for tomatoes! Was this recipe an old one, or newer? I remember canning practices done by family members that are not now considered safe at all! Mary

    If you can, put those jars in the freezer, where it doesn't matter that they haven't sealed. Otherwise, in the frig and use them up fast. It would be a shame to cook them yet again. Mary

    Everything has been in short supply around here! I use the low sugar Sure-Jell, the one in the pink boxes, and finally a neighbor found some for me at Kroger last week. EVERY normal store supply has been out for over a month! She's been looking for regular lids, and found some with rings...

    @archeryrob , will offsetting those center supports be right/ Should they be directily under each other instead? How will the shelves be attached to the framing? Just nervous about the weight, and have had bad experiences... I'm not a carpenter!!! Mary

    Try to buy organic fruit if possible, and peaches are hard to find. They weren't labeled as to variety, and I took a chance. Nice peaches, but hate clingstone! Going to make more, but only when the freestone types are available. Meanwhile, on with the zucchini! Mary

    I love the pink boxes of Sure-Jell, the lower sugar pectin. It's great, either making freezer jam or the water bath type. Marmalade!!! Use a combination of lemons, oranges, and either tangerines or the little 'Cuties'; every batch a bit different, all wonderful! Also blueberry...
