Anybody know of a recipe that needs a lot of eggs?

I am sensitive (allergic or whatever) to wheat so I have a fake tortilla that I make with eggs and tapioca flour. It actually tastes like a crepe more than a tortilla but it behaves like a tortilla. I make them in large batches and freeze by the pile. The following recipe is for 3 tortillas--I usually make it times 8 but any multiple will work.

2 eggs
1 tsp coconut oil
1 TBS water
1/4 C tapioca or arrowroot powder
1 tsp coconut flour

Mix all ingredients. Tapioca behaves like cornstarch so I just dump it all in and wire whisk till the lumps disappear. In a medium hot round skillet or crepe pan, pour in about 1/3 C batter and roll it around to coat the pan bottom. Flip. Calls for cooking one minute per side; I find much less time is required, and though the recipe called for no grease in pan, I find it works better to wipe the pan with coconut oil now and then.
 
I'm really surprised no one suggested deviled eggs.

But given how crazy society is getting, I think you'd really be missing an opportunity to help yourself and others by making some survival foods like pickled eggs. You can use those easily for needs that arise and helping people.
