Baking with first eggs?

That's exactly what I do. Well actually I use all of the little eggs in a quiche or egg bake (crustless quiche,) and I just use as many as will fit in the baking pan. But yeah for a recipe, I consider 2 little eggs = one large; 3 = jumbo. My favorite way to use up alot of eggs is "Taco Egg Bake," it's awesome.
 
My hens just started laying eggs, so they are small, but otherwise amazing eggs, does anyone use these eggs for baking? Can I just use 4 small eggs instead of 2 “jumbo” store bought eggs?
Yes and yes.
I make a frittata every other week. The recipe calls for 10 large eggs. I have bantams and mid-sized birds that lay small eggs. No one wants to buy these eggs. They want the big eggs my big girls lay. So I use the small eggs. I will boil them for smaller sized hard boiled eggs on my salads or for snacking. I use 18 of these eggs in place of the large eggs called for in my frittata recipe. It all works out.
