Blue egg gene

Am i correct in my assumption that blue egg gene is dominant, and that any first gen crosses of pure blue ameraucana, with either a brown (for green eggs) or a white egg layer(for blue) would carry the gene and thus be EE's that lay only blue or green eggs?

yes...but only if the the ameraucana is Homozygous to the dominant blue egg gene( O ) if mated to any of the breeds you said, expect all the hens to lay colored eggs, and NOT they wont be EE they will just be Ameraucana mix...

Actually any Ameraucana mix is an EE. Even those Ameraucanas that are crossed between two varieties.
