Broody hen

So I have hen that was VERY broody, gave her 2 eggs. Day 21 was late Tuesday evening. One egg hatched Monday. I moved the hen to a smaller coop, with chick and unhatched egg. Momma has not moved from nest, but when I brought food and water closer, she ate and drank and called chick out. Question how long do I wait to take egg?

I have had eggs set the same day hatch a couple days sooner than 21 and 4 days later...

Yes both were set same time, I gave them to her, I got them from a couple people at Ohio Nationals. I didn't have a rooster at that time
