Chuckars When?

I'd say from 12 weeks and on, but I wouldnt wait later than 16 weeks or so for monetary reasons. The older birds are a little more flavorful I hear, while the younger ones are more tender which is what I prefer. Im about to slaughter some tonight that are 13 weeks old.

I butcher chukar at 16 weeks.... They will have 93% of their adult weight and my roos usually weigh right at 20 oz at this time. Average hen about 18 oz... At 16 weeks, its a good bet that if it shows signs of a "spur bump", its a roo. Not all roos will show a bump this early, but most will. Some hens will get spurs too, but not this early as a rule....
