Could a double Yolker egg hatch?

Very unlikely. It is rare for both babies to make it past 2 weeks of incubation, rarer for them to both be alive for lockdown, and even rarer for both to hatch alive. There just isn't enough room in one egg for both babies to grow properly. Typically either both embryos die, or only one lives. If one were to make it to hatch, it'd most likely need assistance in hatching and it may have some developmental issues.
