Okay, that's good to know! I handled my rooster from a young age, but he is sounds like the exact opposite of yours! 😅

I wonder if it has more to do with genetics than anything else...
I really think so. I refuse to have aggressive roos in our flock, we have 8-9 roos most times. Our Polish roos were cuddled from a young age and turned out awful, as were their chicks. My nice roos make nice babies, regardless of handling

Thank you so much for the responses and advice! That is good to know. So it sounds like most of the d'Uccle roosters tend to be rotten, but there are a few sweet ones sprinkled in.
I’ve never had a d’uccle boy that has been aggressive to humans. They can be real jerks to other roosters, and sometimes they seem more aggressive mating the girls, compared to other breeds, but none of mine have ever been human aggressive.
