Freeze cabbage?

Are you familiar with blanching fresh produce before you freeze it? If so, blanch time for cabbage is 90 seconds.

You can shred it, freeze it in wedges, or freeze laves, depending on how you plan to use it. I generally shred it and use a vacuum sealer to remove all air. I fill the bag and freeze it before sealing so the moisture doesn’t interfere with the seal. It lasts a really long time. If you use zip-loc type bags you can eventually get ice crystals.

You can freeze it without blanching it but the quality can drop if you keep it too long. How long is too long? Depends on your packaging method and how you plan to use it.
