Welcome to BYC. Daddy always said, "Never lend money to or enter into business relationships with friends or family." That might also include neighbors.
How I wish so very, very, very, very (did I mention VERY?) much I wish I had listened to such advice? I have since lost what I thought was a very close relationship after hiring a friend to do some work on my house without a written contract of any sort. Based on the relationship, I fully expected to be able to trust everything would go smoothly and communication would be clear. Alas, I learned a hard lesson about that and vowed to never enter into such a situation ever again, no matter who it is.
Whatever you do, if you choose to go through with your plans, get everything in writing, and preface it with the fact you just want to make sure everyone is on the same page. If it were me, though, I wouldn't want to spoil a neighbor relationship over such an issue, so I'd follow Redsoxs' advice to just sell the eggs to her instead.
