Sending an email at a later time/date

Oh yeah, check out Boomerang for Gmail which is a free add-on. I love it. You can schedule a message to be sent at ANY time in the future. The beginning of the year, I write all of my family to say happy birthday, and schedule the email to be sent in the early hours of their birthdays. There is a 16-18 hour time difference for many of my family members and since they are ahead, before Boomerang I used to miss their birthdays a lot, because by the time I woke up in the morning and realized it was the day, it was already past bedtime for them. Now I never miss!

The free version allows you to schedule 10 messages a month. I haven't found that to be a limitation since it is effectively 120 messages a year. There is a paid version you can buy (I think $5/month) if you need to send more than that.
