Interesting, how does the avocado change with baking...temp and time?
The avocado is warm and soft, kind of like it would be inside an omelette. No change to texture. 400 degrees for 15ish minutes or until the yolk is desired doneness.

You can find tons of recipes online that doctor it up, but I keep it simple and just add salt/pepper.

Eggs with avocado doesn't appeal.
I love them eaten with a spoon right out of the skin...
...or smashed onto toast with a sprinkling of red pepper.
