Whatcha Making for Supper?

I rarely eat potatoes, but for some reason I was craving them today. I bought a 5 pound bag of small red potatoes. Cut a few of them in half, fried them slowly for a little over an hour in canola oil and bacon grease.

Topped the browned sides with pepper jack cheese. Plated them, topped them again with fresh chopped parsley, tarragon and chives. Made a dip with ketchup and horseradish.

I ate them a couple hours ago and I still feel full. It was tasty! I should eat potatoes more often.
