Your favorite fancy Vegetarian/Vegan main dish?

Ok, so, every year I have me a nice holiday party for Yule.

While I'm not, I have several friends who are vegetarian/vegan/pescatarian etc. and a few people who have lactose intolerance. These friends attend my party of course.

Every year I make one or two meat main courses and a vegan or lacto vegetarian main course to account for these people. But I'm looking for new ones because there's only so many variations on squash and mushrooms you can do. So I'm looking for your favorite recipe! The ABSOLUTE requirements are;

Made with whole foods, not meat-ish plants like a tofurkey. Not that tofu is a problem, but like veggie bacons and vegan cheese and such are. So no fake meats/plants trying to take the place of meats/cheeses/etc.
A good protein source like mushrooms or nuts or both. Or beans, etc. (This is why tofu is fine)
Very holiday centerpiece! A bowl of soup isn't a very good centerpiece, roast carrots aren't a very good main dish, etc.
Heckin tastes good. :(

Aunt Angus, that's mine too. Hence the list of what I've already done. I was hoping to branch out. :p

The stuffed pumpkin sounds nice, though! I could carve fanciful patterns into the skin of small ones....

I guess I was hoping for something newer though...!
 
It's soooooo good and so pretty! I've stuffed pumpkins with typical stuffing, too, but I don't make that particular dish vegan, but you could! I've stuffed it with both cranberry farro salad and pomegranate farro salad.

Oh! Veganor vegetarian pot pies/shepherd's pie, too! You can make a crust on the bottom with rice cauliflower to make it vegan, if you can't find a vegan pastry that works.
 
We have vegan pie crusts and pepperidge farm puff pastry is vegan too and is my go-to for veg*n crusts that can be found anywhere. :)

Curry isn't really main-dish-y. It's more of a soup... And squash is NOT a requirement!
