Anyone have a cookie recipe that is similar to 'Nilla wafers?

In the past I used a lady finger recipe and added 2 drops each banana and vanilla extract. I also cooked them until the tops browned to assure they were crunchy. Worked great.

I have a glut of capsicums (sweet peppers?). Anyone got a tried and true way to store them? They are from my sisters garden and is her first real harvest but she's in hospital and can't use them. I'd love to pickle or relish or something so she had them when she comes home. Ideas?

That is perfect! I was just searching recipes but they all had cups and cups of sugar and because she is a diabetic that's no good. This one only has 1 tablespoon of sugar. I will let you know how it goes!

Yes, that's just the sugar they say to put in tomato sauce to offset the acidity, it's not a sweet relish where there's lots of sugar.

Hopefully my peppers will do well this year. I usually just freeze mine to use while cooking but the spread would be something new and exciting!
