This is one of those barbie cakes I did years ago for my daughter. It's a Cinderella cake, thus the mice :).

Ok here's the recipe:

RED VELVET CAKE -from The Georgia Cookbook by Bill Ragan

2 1/2 cups of self-rising flour
1 teaspoon baking soda
1 1/2 cups granulated sugar
1 teaspoon unsweetened cocoa powder
1 cup of buttermilk
1 1/2 cups of vegetable oil
1 teaspoon vanilla extract
2 large well-beaten eggs
1/2 cup red food coloring = 2 one-ounce bottles
1 teaspoon white vinegar

1-Sift together the first four ingredients.
2-Add buttermilk, oil, vanilla , and eggs. Mix well.
3-Add food coloring and vinegar. Mix well. (An electric mixer is preferred).
4- Preheat oven to 350 F. Spray three 9-inch cake pans with a non-stick coating. Pour batter equally into the three pans and bake 20 minutes. Test for doneness with a toothpick.
5 - Cool layers in pans on a wire rack for 10 minutes. Carefully remove the layers from the pans and allow to cool completely.

Frosting:
1/3 pound or 1 1/3 sticks of butter softened.
10 ounces of cream cheese, softened.
1 pound confectioner's sugar.
2 cups chopped pecans (optional)

1- Combine butter, cream cheese, and confectioner's sugar in a bowl.
2 - Beat until fluffy and then fold in 1 1/2 cups of the pecans.
3-Use this to fill and frost cake once it is cooled. Decorate the top of the cake with the remaining 1/2 cup of pecans.
4 - Refrigerate ate least one hour before serving.

*** I can't eat nuts so made mine without the pecans.

I am happy that my daughters did not ask for cakes like that. I did make a bunny cake once though.

Well mine did not ask for it, she will be two. But I do enjoy baking, and want to get more adventurous decorating. If it is ugly we will still all happily eat it (I have made many an ugly cake, but never a bad tasting one :D....well that is not true as a teen I once got Baking Soda and Baking power mixed up :sick

Salt for sugar is a classic mix up!

I once made a cake that had green colored mint ice cream in it. The ice cream did not set, it kind of "flowed" down into the freezer. It was ugly! but tasted great.

We renamed it to "Jabba the Hutt" Cake......
