Mis en Place:
1 cup diced onion
1/2 lb broccoli rabe, washed and cut into chunks
2 tsp chopped garlic
pinch red pepper flake
1/2 cup chopped parsley
1 cup grated parmesan
1lb package caviatelli pasta
Preparation:
Start pasta water, chop onions, broccoli rabe, a bit of parsley and some garlic. Saute the onions and broccoli in some evo for about 5 minutes. When pasta water is ready add the cavatelli and stir well - after about 2 minutes add two ladles of pasta water to the saute pan, add a pinch of red pepper flakes, a pinch of salt and the garlic, saute two minutes. Cavatelli needs to cook about 7 minutes to be el dente, when pasta is ready add to saute pan, toss well for about 1 minute. Off the heat drizzle a little EVO to it all and about a cup of grated parm and the parsley. Serve
It's amazing stuff...
