Ingredients:


1/2 c. butter
1/2 c. sugar, white or brown
2 eggs
1 1/2 c. mashed bananas (4 large)
1 tsp. vanilla extract
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 c. whole wheat flour
1/2 c. chopped walnuts
1/4 c. dark chocolate chips, optional

Cooking Instructions


Preheat oven to 350°. Grease two short bread pans or one long bread pan. Cream butter and sugar, add eggs, bananas and vanilla and mix well. Mix dry ingredients together and add nuts and chocolate if desired. Stir into wet mixing well, then place in pans. Cover with tin foil and bake for 50 minutes. Remove tin foil and continue backing for an additional 15 minutes. Test center with toothpick or knife making sure it comes out clean.
