Fancy French Toast
Note: I have not made this recipe in a while and the recipe may change as I start experimenting with it again.

Ingredients
3-4 slices of day old bread (any type will work, I prefer white bread)
2-3 eggs, depending on size
Cinnamon sugar mix (McCormick sells this, but if you don't have it just mix half and half)
2 Tbsp. milk
2 Tsp. honey
Splash of vanilla extract
Splash of almond extract
Maple syrup
Powdered sugar (optional)
Instructions:
1. Heat a large stainless steel pan to medium heat.
2. Add the bread add sprinkle cinnamon on both sides. Cook until the surface is hardened, but still the original color (sides may brown a bit). Flip and repeat.
3. In a wide bowl, mix the rest of the ingredients. When adding cinnamon/sugar mix, sprinkle a bit at a time then stir, until the desired amount has been reached.
4. Spray the pan with cooking spray. If you don't have that, try a bit of butter. (with cinnamon sugar of course!)
5. Quickly dip both sides of each slice of bread into the egg mixture, coating them evenly.
6. Immediately add bread to pan, and let for about 5-10 seconds before flipping it over, then repeat. Never leave the bread unattended, as it cooks very quickly. The toast should be browned.
7. Serve with maple syrup and sprinkle with powdered sugar, if desired.
