I had the same problem with my hen Flint. Put a small section of a 2x4 at the opening of the nest box - she will not be able to kick the bedding out of the nest box. Also if you are using pine shavings as bedding, switch to straw my hen didn't feel the need to kick that around as much.

7?! Wow! I have never heard of a chicken having 7 toes on one foot. Normal chickens have 4 toes, some breeds (like silkies) have 5 because that's there breed, anything past that is probably a deformity he was born with. They could still be Silkie mix but not have the extra toe gene.
