1 yr old Ameraucana's (all 5) stopped laying green eggs a week ago. ?

I am going on the assumption (yes, yes, I know!) that you have Easter Eggers instead of true Ameraucanas. That being said, EE's are fickle layers. I find that they will take long stretches off from laying. Especially during the winter.
 
Given the time of year; it should be expected. Some breeds have been specifically breed to minimize the tapering off of egg production during the shorter daylight hours of Winter. However; most have not been successfully need to minimize this natural and health trait. It is especially important for those that do not plan on culling their hens after 2~2.5 years... From what I've read.

Easter Eggers are often known for going on weird breaks like that. My only hatchery-based Easter Egger usually gives me an egg every week for about a month, then takes a few month's break for who knows what reason. . . She's got a lot of genetic issues too though. I find Easter Eggers from certain hatcheries are prone to a lot of genetic or behavioral problems.
 
I'm in teh same boat, I have 4 easter eggers and not one has laid an egg since the first week of november, luckily my leghorns and rir and red star hens keep up with production. the leghorn especially , she's still at 4-5 eggs a week.

Me too! Had 2 established EE hens - one layed a cream colored egg, the other green. Since the molt I haven't seen an egg from either of them in what seems like months (but is really only weeks). Luckily, I ordered 8 additional hens - with 2 being EE's - in May and these girls are laying well and I'm back to getting green eggs.
 
I have several EE's and they lay sporadically. There are a few I get eggs from just about every day, but most of them maybe 2 or 3 a week. I have one that laid the most beautiful green speckled egg once, and I have yet to get a second one. It's pictured in my avatar and the only one I have ever gotten like it. I have two pure Ameraucana, one male and one female, but she is not laying yet.
 
My EEs are very good layers when they're laying (5-6/week). But, they molted in October. Once the feathers were in and they weren't getting back to it, I installed a light and a timer. They came back into lay after about 2 weeks with 13 hours of light (I'm using a 40 watt bulb in a 4x8 and it's enough that they act like it's daytime). I have other breeds and have achieved similar results with all of them.
