I go back and forth on this one as it matures. Right now I'm unhappy thinking cockerel. Thoughts?

Head feathering is different on cockerels and pullets. What I’ve noticed is the cockerels have very pointed mohawks and pullets have rounded bushier mohawks.

The last few photos you have are of a pullet. The cockerels develop more “red” feathering. The pullets remaining a more pale/softer color orange.

Baby Spitzhauben Roos get little buttons where their horn-like comb will grow out. You can see on this one, there are little fleshy bits above his nostrils, just before his crest starts. By the time they are the size of the pullet (yep) in your picture, they should have a pretty obvious V-shapes comb starting, plus the tail will start to have a few longer feathers at the top and starting to cascade over the rest.
Sadly, I don't have spitzhaubens anymore, but I adored them!
