Am I wrong to feed my girls leftover sausage, egg and bacon?

Any food source, whether is it valued as protein of some other mix of nutrients, is better directed at chickens than to trash or directly to the compost bin. Care must be taken to not feed such items in excess. What is is minimum amount that is excess may not be defined for chickens fed such fare so I would make so it make up only a minority of what is consumed and so that minority does not occur on a regular / frequent basis.
 
Mine get all sorts of leftovers either chucked in the run to keep them busy or mixed into their normal feed as a mash. It’s all about balance and not wasting stuff around here.

As others have said, no you're not wrong. In the winter months this question is especially difficult as most back yard feeds are formulated for birds that have access to bugs and grass during the day and the nutritionists who balance it assume we'll provide treats for up to 10% of their diet. So when you hear the 10% rule, that's where it comes from. When birds don't have access to bugs and grass it changes the equation, so during winter I try to add things like alfalfa, greens and hay along with some meat protein, but that is just my best guess.
