Am I wrong to feed my girls leftover sausage, egg and bacon?

Just don't feed them too much, and they'll do great. The added protein is actually very healthy.

I quit using a garbage disposal when I got my 1st chickens. They look forward to scraps every day!

That’s exactly what I thought, they are little dinosaurs so they will eat anything (me if I stand still long enough) lol

My concern would be with the sausage only because of the sodium in sausage. I've given my flock meat on occasion such as cooked hamburger and canned tuna but no processed meats or anything we've eaten to which salt has been added. I know that in general, sodium is bad for birds so I apply that to chickens too.

Tilly, as long as they don't eat a lot. The big issue here, especially given that you have a large amount available to you is that they don't get too much salt and fat from those left overs.

Feeding leftovers from your home care residents is a great way to recycle! How do the residents respond to the chickens? I'm guessing you have a lot of help taking care of them?
