Any guesses on what breeds this chicken might be?

If she's bantam sized, start going through assorted bantam breeds. You said she sort of fits the d'Anver. Start with the various colors of those and go from there. It's a better fit than a bantam EE.
 
I know Easter Eggers are considered a mutt. Are they all created the same way or are they a bit of a mix of everything?
She’s probably got some bantam Ameraucana in her, but pretty far back, as the blue egg gene has been bred out.

She’s 100% not a d’Anvers, she’s got the wrong comb type and body shape. Bantam Easter Eggers are quite common, and I’m positive that’s what she is.

Can't you make a bantam out of anything? Or am I misremembering?

I figured she's an Easter egger, but I just wanted to be sure. I've never seen someone with a posture like hers before. And her coloring. Where would she get her coloring from? I've never seen one quite like hers. She's absolutely beautiful in the sun. Almost kinda pink. I'd love to get more of her someday. She's incredibly easy to break when she's broody, sweet as a button, and so high strung that she managed to set off my flock and the chickens both to the left and right to me this morning.

I was mostly wondering if she's something specific since the Wyndottes were definitely bred to look like that, but I keep forgetting Easter Egger isn't just a backyard mutt that has puffy cheeks.
 
Bantams are bred with small size in mind. Not sure how to start from scratch, but I would be using bantam breeds with traits I'm interested in as a starting block.
