Any Home Bakers Here?

I had some oranges to use up and decided to make an orange upside down cake. I didn't really use a recipe, but just saw a picture of one online and tried to replicate it. I basically just sliced the oranges thin, poured a melted butter and brown sugar mixture over them, and poured my cake mix (Jiffy yellow cake with fresh orange juice and zest added) over the orange slices.

Overall, it tasted really good and I loved how the butter and brown sugar turned to a sort of caramel on top. However, the orange slices themselves were a bit bitter because of the rinds.

Anyone have any suggestions for getting the bitter out of the oranges? Do you think I could cook them in a caramel in a frying pan beforehand or something?

I think this recipe had some potential, but that bitter taste is getting in the way.
 
The simple solution is to peel the oranges before you slice them.

I am going to make such a cake. Yes,, The oranges will be peeled, since the poster mentioned the bitterness.
Now I still have a question.
I never made an Upside-down cake. How do you remove from baking pan without it falling apart???
I was considering lining pan with parchment. I mainly use steel pans. Used Pyrex bowls,,, but only when I bake Flan.
Silicone pans are nothing I want to consider.

Yeah, I thought about that too. I may just do that. But it's weird, all these pictures online show the rind on! So I thought I might be missing something.

I'll probably just peel them next time and save myself the trouble.
