To claim that mutt crosses are healthier than purebreds is just nonsense. Everything depends on the health of the parent stock and the management practises of the breeder.
I would suggest that if you are going to breed to consider helping to preserve a rare breed. You don't have to show or sell stock to be an important part in preserving a breed that is near to extinction. Many of the Ancient breeds and old farm breeds are in a struggle for survival. If you are going to take the time to select breeders, incubate the eggs, brood the chicks and rear them, then why not help a struggling breed to survive?
