Hi, I’m new here but I wondered if anyone else keeps a few older eggs like me? I find that fresh eggs are great for poaching and frying because the whites stay together beautifully. I keep older eggs a couple of months for hard boiling because they peel a lot better than fresh eggs. In Summer when I have a heap of eggs I’ve been known to keep them for up to 6 months in the fridge with no problems. Although I like to put them in water too and if they float I don’t even check them, just bury them in my vegetable garden.
