Baked eggs and bacon in muffin tins

I have tried this and LOVE it. Fast and easy clean up. They are the perfect sizes for breakfast sandwiches. You can just scramble them or just drop the eggs in the muffin tin...ooo and sprinkle some cheese on top...mmmmmm

You fry the bacon til it is transparent first, bake at 375 for about 15-20 mins. Depending on how you like your eggs cooked.

Seeing this recipe prompted me to do some serious searching. There are some great ideas out there online for variations on that theme... Really awesome and easy breakfasts. Also a great way to get picky eaters to gobble down some vegetables.
