I have a barred rock/olive egger mix rooster. He does have barring (looks like a barred rock, really).

What can I expect in terms of coloring, autosexing ability, and egg colors from breeding with the following hens:

Cream Legbar
Black Copper Maran
Olive egger (lavender ameracauna X blue copper Maran)

I'd don't think you can expect much beyond some will have barring and some will not. The offspring from the Legbars would most likely lay green eggs and have a bit of a crest.
Your rooster is a mix with one mixed parent. No way of knowing what egg color genes he carries or hidden color/pattern genes.
None would be autosexing or sex linked.

Would the legbar crossed chicks be considered Easter Eggers or Olive Eggers?

Probably Easter Eggers that lay green eggs, but the eggs will probably not be dark enough to be called "olive."
