Bee hive in coop

They are not yellow jackets. Yellow jackets rarely nest above ground.
Hornets' nests are spherical and covered with a paper like substance.
You are dealing with hornets.

Yellow jackets normally have a hole in the ground leading to their nest.
Hornets have spherical nests attached to a structure.
The ones in the ground are ground wasps there are also a hornet that looks like a yellow jacket that makes a paper nest like white faced hornets. There are also yellow jacket wasps that make the grey comb like nest as well ;) I work in a honey bee store and my husband also takes care of wasps and hornets. Do it at night or early in the morning before dawn. Use a red light to see because they like honey bees are drawn to light and you will get stung. There are many ways to safely remove nests without getting stung ;)

Add one teaspoon of vinegar or canola oil to a quart of water and place in a spraybottle. By spraying bees with this mixture, you not only make it difficult for them to fly, but they will suffocate.
And killing honey bees is very sad. They are our major pollinators for our food! Without them we would not survive. Many beekeepers will remove honeybees
 
While I was doing the fall cleanup, I finally opened up the nest box that had the "bee" hive. The spraying with wasp spray did the trick. Cleaned up the remnants.

I am going to discontinue using this storage area. I also found that something had chewed holes in my bags of oyster shell and grit. I am thinking mice. I will leave nothing in there. That will let me watch for evidence of pests.

Store a few set snap traps in there :D
I'm assuming chooks have no access.
