Best Chicken Salad

Heres mine:


3 cups diced, cooked chicken breast meat
1/2 cup mayonnaise
1/2 teaspoon salt
3/4 teaspoon poultry seasoning
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
1 tablespoon lemon juice
1/2 cup finely chopped celery
small amount of finely chopped onion (optional)

Mix well. I let mine sit in the fridge for an hour or so. That way the flavors "meld" Then you can serve on croissants or I'll toast bread and spread some extra mayo on it. YUM

For a twist-
You can add some chopped almonds or pecans also green grapes that are cut into 1/4s

I boil chicken breast or a whole chicken.

I cut everything in a food processor so it's really fine.

I place chicken, sweet pickles (lots of them), onion, pecans and apples. I chop it very fine then mix it altogether. Then I add Miracle Whip to the consistance I like it.

I get lots of compliments on it and even from DH's ex-wife who doesn't like anything I do or make!!!!

Chicken, breast meat is best
Mayo
Dill Pickle, chopped
Finely chopped onion
Finely minced parsley
Salt, pepper

Serve on crusty rolls.

White meat is best I do on occassion use both white and dark meat. I don't measure. I go by looks. Sorry if this is unhelpful.

Chopped chicken
tiny bit of finely chopped onion
dill pickle relish
chopped apple
chopped celery
craisens
pecans (walnuts work just as well but I like pecans)
salt & pepper
Duke's mayonnaise
very light sprinkle of garlic powder (taste after you mix to see if you need more - less is best because you can always add more)

I serve mine-
- as a sandwhich on very black rye bread (sometimes labled jewish rye or pumpernickle)
- on a bed of mixed greens garnished with a tomato wedge and/or grapes with crackers or very crusty bread cut thin and toasted with a small brushing of olive oil.
- stuffed into a hollowed out tomato also with crackers or very crusty bread cut thin and toasted with a small brushing of olive oil.

I always mix Miracle Whip and mayo (half and half). I think mayo is too bland, and Miracle Whip is too sweet. I also like lots of celery, onions, and nuts or sunflower seeds. Chopped grapes are good, too.
