Black crested white polish How to?

I ordered some black crested white polish (LF) from a hatchery about 9 months ago. Birds matured and started laying and breeding. I did not know that BCW do not breed true. I hatched some chicks, and many range from white, to salt and pepper, to black and white. I would love improving or working with this breed to get the numbers up, the quality as best as possible. Can someone help me or point me into the right direction info wise? I have no idea what to look for in the chicks, which to keep and how to improve. Thanks!

I love them. And almost gave up on them due to the color not breeding true. Somehow I cannot give them up, as improving or working on colors is something I love. Lol
I just wish there was more info available on how to improve this color or to create birds of this color to breed true. If that is at all possible. In the next years I mean lol

I was involved in BCW in '96 when they were accepted into the APA standard. these look exactly like the birds I got from Clark Kidder.
