I was looking at pics of bresse chickens and this pic was with the others. Am I seeing the chicken head displayed with the packaged chicken? Why??

Maybe it's a French thing?

My understanding of this is that Bresse are a expensive breed and raised in a very particular manner. Packaging like this proves they are what they are claiming them to be. Also they are fresh, you know exactly what you are getting.

This is the most expensive and consider the best taste breed in the world. They left the head to reduce fake seller for the breed meat.
