When driving home from work last night and trying to think of something for dinner I remembered this one. It is so easy, fast, rich and yummy. If you try let me know what you think.

Bow Tie Pasta with Brie

3 cups cooked Bow Tie Pasta, drained and set aside
1 Tsp fresh minced garlic
1 cup fine chopped tomato
½ cup chopped and loose packed fresh Basil
¼ cup roasted Pine Nuts (walnuts could be used instead - unroasted)
6 ounces Brie Cheese (triple cream is the best, if you can get and afford it)
¼ Olive Oil
1 tsp salt or to taste
Grated Parmesan Cheese

Heat Olive Oil over medium heat, add garlic and cook just to warm (less than one minute) add tomatoes, cook to only warm through (less than one minute), gently stirring. Add cooked pasta and gently toss/fold until garlic and tomatoes are evenly incorporated. Add basil, pine nuts and Brie cheese. Gently stir until Brie is melted and evenly incorporated. Serve immediately topped with Parmesan cheese.
