Apricot-Almond Baked Brie
1/4 c finely diced dried apricots
1/4 c chopped almonds
1 Tbsp. snipped fresh parsley
2 Tbsp. apricot preserves
1 tsp. Dijon mustard
1 (8 oz.) package crescent rolls
8 oz. round Brie cheese
1 egg, lightly beaten
Preheat oven to 350 degrees. In bowl, mix first 5 ingredients.
Unroll crescent roll dough on floured surface. Separate into 2 squares, pressing seams to seal. Place cheese on one square, trim corners, leaving about a 1-inch border. Scoop apricot mixture evenly on top of Brie. Trim second square to match the bottom, place over cheese, pinching seams to seal. Transfer to a small dish with sides. Brush egg over entire surface of dough. Cut slits or small shapes in dough, to let steam escape. Bake 30-35 minutes or until crust is a deep golden. Remove from oven, let stand 15 minutes. Serve with crackers, apple, or pear wedges.

also try baking your garlic and spreading on bread (baugette) then topping with brie - awesome.
or mix some red pepper with black berry jam - stir on stove until warm for a suace
then wrap little chinks of brie in philo and bake - dunk in blackberry sauce . . . ohhh soo good!
my kids like it on granny smith apple slices too.

I like to put on fresh bread, or wrap ina pastry shell with apricot preserves and use as a spread.... and even have put it on my burgers. Eating it with apples or pears is divine too...

Its best at room temperature, but it hasnt stopped me yet

I really do love it tho... I can eat a whole small wheel of it before I get that cheese overdose going lol

Swiss cheese tho, and others like it I can't stand

Brie just might be a cheese that you either love or you don't ...like the Swiss.
 
I'd call Brie an acquired taste. Most people unfamiliar with it seem to dislike it at first. Some people later find they like it, some don't.

I like to heat it and eat it with roasted garlic and crackers.

Also - Make wedges of soft-shell tortilla (cut small round ones in wedges, like a pizza)
Serve with warmed brie, toasted garlic, sliced black olives, and diced tomato!
