I have a broody chicken and was checking to make sure she was okay when I noticed she had saggy skin? It’s loose and feels a bit rough, she has been broody for about a week now. Is this something that I should be worried about? (The images are of her belly area)

Has she been eating during the week of broodiness?
Is she sitting on any eggs and are they fertile?
Is she sitting but not on any eggs?
If she is sitting have you seen her get off the nest to eat and drink?

I haven’t seen her eat anything (I’m working on buying a camera to install in the coop) but whenever I put her outside to run around she always lays massive poops, so I was assuming that she’s eating well. Since I only have 3 hens she’s been sitting on the other two girls eggs and they aren’t fertile.

You should if possible make sure you see her get off the nest, eat and drink and dust bathe at least once.
I lift broodies off the nest that I'm not sure about anyway. Wake them up from the trance, put food and water in front of them and make sure they eat.

I don't suspect anything wrong, but are you going to give her chicks? Fertile eggs? If not use a broody breaker cage to get her off the nest and eating regularly again.
What is a broody breaker cage? Also I’ve seen on social media that some people give their broody chickens a bath to break them out of it, would that work too?
