My eight hens and a rooster have been together for two years. This last week one hen is being picked on. She's too scared to come out of the coop and I don't think she's eating much. She also let's me pick her up where she wouldn't before.
I took her outside and stayed around her. When I stroked her feathers she settled down - then one of the others came up and pecked her.
I'm not sure what to do. The bullied hen doesn't appear to be sick but she feels very light.
Any advice would be appreciated.

Do you have photos of her and her poop?

She's scared of coming out of the coop? She's being bullied - how long has this been going on? Rooster involved in picking at her too, or just hens?

Check her for lice/mites, make sure her crop is emptying overnight.
When was her last egg?

If she's being bullied and not coming out - she's not eating/drinking well and will get weaker.

Cage her within the coop or run, provide her with her own food/water. This will give you time to observe her, check her over and see if see improves with getting food into her.

If she's suddenly being picked on, then likely she's sick or has something going on like a reproductive disorder - hard to know at this point.
 
I've sectioned her off from the others and she's had a bit to eat. Mostly she wants to sleep in a nesting box. I noticed something wasn't quite right last week but yesterday I saw the bullying taking place. Hopefully she will eat more and get some strength back.

Sounds like she's sick.
I'd check her over really well.
