Cooking/Grilling Quail!! Recipes???

With all the quail problems that is discussed I would like to switch it around and talk about the bright side - Eating them!

How do yall make your quail on the grill? Marinades? Seasonings? How can I fix these puppies up on the grill to make them turn out like a 5 star restaurant made them and I paid $30 for it?? Looking for you top chef choices here!!!! I got some birds in the fridge waiting on me to fix them up for the grill, whole, split down the breast laid out flat to lay on the grill rib cage down...
 
OK, now, here is one link you will need to review. To make this "assembly line" easy, I took 5 empty gatoraide bottles and cut the bottom off each one. As I grabbed a roo and thanked him for becoming a menu item, I dispatched each one and placed it head first... or, below the neck first into the bottle and placed the bottle into a bucket so it could bleed out. Then repeated the process for the next 4 roos. I've previously dispatched a dozen quail, so it's easy to do each step for 5 quail than to process one quail at a time.
Here is a YooToob video on how to "debone" quail. This past Sunday I deboned for the first time, and pulled the bone off just as described in the video.
You could "stuff" the quail like they did in the video, but my wife made a quail gumbo. We quartered the breast and cut the meat from the leg and browned the quail before tossing into the crokpot.

oh James I didnt mean to make it sound like I needed help killin em. I was looking for a recipie. I ended up finding a really good one though that I used. I dont have a problem at all with killing things. Done it all my life, I used to pop dove heads off at like 4 years old when the family was out dove hunting. All that seems like a lot of trouble to go through, I clean em in 30 seconds when I'm in the groove lol.
 
Quail split down the back and laid open
Place in bucket of salt water overnight to add flavor and draw out any extra blood
Remove from bath and let drain
Place 1 lemon wedge into body cavity of each quail
Fold quail around lemon wedge
Wrap in bacon, usually 1 piece per quail will cover the body, and keep it from drying out!
Sprinkle with pepper.
Smoke @200 for 3 hours using hickory
Perfectly done smoked quail

This sounds AWESOME!! I might have to start raising quail just to try the recipe.
 
I did a pablano pepper, salt, honey, garlic maridate that I basted them with as they grilled... turn out fabulous!! Im so ready to kill more of them!!!!!
 
I've done the grilling in the past but this batch the other half decided to handle it and stuffed them with wild rice and wild mushrooms and roasted them for a bit. OMG, now that was the 30 dollar dish. She got the wild mushrooms from the store we didn't pick em from the backyard, lol
