Cottage cheese waffle/Oatmeal waffle recipe

I just wanted to share one of my families favorite waffle recipes.These are perfect for using up that last cup of cottage cheese, my kids LOVE these. They should be made with a belgium waffle iron for best results. These do not reheat well they get soft I would eat immediately.
Cottage cheese waffles

* 4 tablespoons unsalted butter
* 1 3/4 cups all-purpose flour
* 2 teaspoons baking powder
* 1/4 teaspoon baking soda
* 1/2 teaspoon salt
* 1 cup cottage cheese
* 1 cup milk
* 2 large eggs
* 2 1/2 tablespoons honey

Directions
Preheat your waffle iron.
Melt butter, reserve.
Whisk dry ingredients.
In a separate bowl, beat cottage cheese, milk, eggs, honey. Don't try to beat out the curds of cheese. Gradually add dry ingredients to the cottage cheese mixture, stirring only until the dry ingredients are incorporated. Stir in butter.
Spray grids and spoon out 1/2 cup batter onto the hot iron, cook until darker golden

This looks good. I'm going to borrow my mom's waffle iron and try this recipe!!

Here is another to try
This is a Christmas morning tradition for us, I make the batter the night before and we enjoy them in the morning smothered with powdered sugar! This recipe also requires a belgium waffle iron.

Oatmeal Waffles
2 C. of milk
3 eggs
1 cube of butter or margarine melted
2 tsp of vanilla
4 tbsp of brown sugar

combine these ingredients
------------------------------------------------
2 C. flour
1 1/2 C. of oatmeal (I have used quick or regular what ever is on hand)
3 tsp of Baking powder
1 tsp of cinnamon
1 tsp of salt

1. Combine dry ingredients in separate bowl
2. add to the wet ingredients I just use a wooden spoon
3 Spray your grids and use about 1/2 cup per waffle, cook until dark golden
These are best served with butter and powdered sugar!
Also I have substituted some of the butter with applesauce for a less fat version. Play around with the recipe. It is certainly not an everyday waffle but we love it for a special treat.
